The recipe, as featured on the Chicago Tribune dining column:

1. Roast whole chilies, eggplants, and garlic in a dry skillet or on a griddle over medium-high heat.

Cook until lightly charred in spots and somewhat softened.

Peel charred skin off chilies and garlic.

Pound all the vegetables in a mortar with a pestle until you achieve a coarse texture.

You may have to pound the ingredients in batches.

(If using a food processor, pulse until you achieve a rough texture, not a fine puree.)

2. Fold shrimp paste in a piece of aluminum foil; heat for 3 minutes over low flame.

3. Add shrimp paste to the pounded vegetables, along with the fish sauce, lime juice, sugar, and chopped cilantro. Mix to incorporate.

4. Serve with raw vegetables (such as long beans, cabbage, and carrots) and/or your choice of protein.
